Spinach is on the “super foods” list as one of the healthiest foods you can eat. The problem is, you can’t always get your kids to eat it. My kids are young men now and they still love my spinach casserole and I hope you like it too. It’s so easy to make and good for you too. I hope you like this recipe. You will need the following ingredients:
4 / ten ounce boxes chopped spinach
1/ envelope Lipton onion soup mix
1/ 16 ounce container sour cream
1 cup grated cheddar cheese
Bread crumbs to taste
Cook spinach and drain well. Add soup mix, sour cream and most of the cheese. Mix well and pack into casserole dish. Top with bread crumbs and cheese to taste. You can also top with some melted butter if you like. Bake at 350 degrees uncovered for 30 minutes. Goes well with any meat and red skinned garlic mashed potatoes. ENJOY!
