Andrea’s Supream Tortellini

ingredients:
1 jar of marinated artichoke hearts (quartered)
1 jar of roasted red peppers (cut into strips)
20 thin slices of peperoni
1 package of fresh baby spinach
10 pitted kalamata olives (chopped)
feta and mozzarella cheese to taste
cooking instructions:
Bring water to a boil and cook the tortellini. While the tortellini are cooking for the 7 to 9 minutes - open the jar of marinated artichoke hearts (juice and all) and put it into a pan on medium heat. Add the roasted red peppers on top and layer the pepperoni on top. When the tortellini have about 4 more minutes to cook add the baby spinach to the artichoke/peppers pan. After the tortellini are finished add all of it to a large bowl, pouring the artichoke/red peppers on top of the tortellini. Add feta and mozzarella cheese to top. Enjoy! If you like you could make garlic bread, put mozzarella and quartered artichokes on top and cook in the oven until crispy.
