More good uses for leftover ham

Leftover Ham Pie

2 cups cooked ham, cut into bite size pieces
1½ cups shredded Mozzarella cheese (or any cheese you like)
1 tablespoon thinly sliced green onion
1 (8-oz.) pkg. corn muffin mix

Sprinkle ham, half of the cheese and the green onion in the bottom of a greased 9-inch pie plate. Prepare corn muffin mix according to package directions; pour over ingredients in pie plate. Sprinkle with remaining cheese. Bake at 350 degrees for about 20 minutes. Serves: 4-6

Ham and Apple Salad


2 cups diced cooked ham
1 large red apple, unpeeled, cored and diced
1 stalk celery, sliced
1 green onion, minced
¾ cup raisins
¼ cup mayonnaise
½ teaspoon poppy seeds
1/8 teaspoon curry powder
Dash of white pepper
1 tablespoon lemon juice
Lettuce leaves
Apple slices (optional)
Parsley sprigs (optional)

Combine first 5 ingredients, tossing well. Combine mayonnaise, poppy seeds, curry powder, pepper and lemon juice stirring well; add to ham mixture, and toss well. Cover and chill. Serve on lettuce leaves. If desired, garnish with apple slices and parsley. Serves: 4
