Budget Gourmet: Spicy Chicken Pasta

Spicy Chicken Pasta
25 minutes prep time  
20 minutes cook time
Serves 4-6 people

Ingredients:

  • 1 box Barilla High Protein Pasta
  • 1lb ground chicken or turkey
  • 2 spicy Italian Sausage or Bratwurst links (out of the casing)
  • 1 medium size pepper (any color will do)
  • 1 small-medium size red onion
  • 1 bag spinach salad leaves
  • 3 Roma tomatoes
  • 1 container (6 oz) of crumbled blue cheese (Recommendation: Boars’ Head)
  • 2 tsp onion powder
  • 2 tsp  garlic powder
  • 2 tsp  chili powder
  • 2 squirts (~ 1/4tsp but more if you like a lot of spice) hot sauce
  • 1 Tbsp minced garlic
  • 1-2Tbsp Extra Virgin Olive Oil (EVOO)

Preparation:

  • Boil water to cook pasta. Follow directions on pasta box, pasta will take about 7-10 minutes to cook.
  • While water is boiling, chop pepper, onion, and tomatoes to desired size. Place in separate bowls and place to the side.
  • In medium sauté pan, pour 1Tbsp EVOO in pan and brown ground turkey and spicy sausage to desired size.
  • While meat is cooking,  season with onion, garlic, chili powder, and hot sauce.
  • When meat is cooked, pour in a small bowl and move to the side.
  • Cook peppers and onions in same pan that meat was cooked in to use natural oils produced by the meat.
  • The amount of vegetables cooked will depend on your preference. If you don’t use all of the cut vegetables, place them in a sealed container and use them on salads and other dishes prepared throughout the week.
  • When vegetables are half way cooked (still al dente), pour desired amount of cut up Roma tomatoes and garlic into pan.
  • Once pasta is cooked and vegetables are cooked to desired texture, pour ¾ of blue cheese into pan; stir.
  • Finally, stir in pasta, remaining blue cheese, cooked meat, and desired amount of spinach leaves into vegetable mixture. Stir until pasta is completely covered with blue cheese.
  • If blue cheese is not stirring easily, stir in remaining Tbsp of EVOO and a little pasta water for easier mixing capabilities.
