Scallop Cakes

4 slices of thick cut bacon cut in to small dice or lardons
1 lb of large scallops cut length wise
4 eggs
One quater cup of mayo
1 tblspoon of old bay
pinch of garlic powder
1 tblspoon mustard
Pinch of salt
One pack saltines crushed
Quater cup flour

Preheat oven to 350.


In large saute pan render bacon till crispy brown. SAVE BACON GREASE in pan. COOK ON MEDIUM HEAT.


In large bowl combine scallops , mustard , eggs, bacon,garlic powder, and crushed saltines and mayo.


Mix with hand and form 4oz pattys.


Place cakes in pan and sear one side 2 minutes.

Place pan in oven and finish cooking for ten minutes.


Serve with garnish of choice.
