Martha P., of Marion, asked me for a specific bar cookie recipe using a cake mix and I’m offering it here ... I’m also offering my yearly homemade ice cream recipe. This time it’s strawberry, using frozen berries, and it’s a non-cook recipe, but there are no eggs so you don’t have to worry. Cookies and ice cream would make a good dessert tonight.
Peanut Butter-Chocolate Chip Bars
1 chocolate chip or yellow cake mix
2 eggs 1/3 cup vegetable oil
1/2 cup chunky peanut butter 1 cup chocolate chips
Preheat oven to 350 degrees. Mix together cake mix,
eggs and oil. Mix in peanut butter. Stir in chocolate chips.
Pat the mixture into a 9 x 13-inch pan.
Bake 14 to 17 minutes, or until golden brown.

Strawberry Ice Cream
(Ice cream maker)
1 pint (2 cups) whipping cream
1 (16-oz.) pkg. frozen
strawberries, thawed until icy
1 (5-oz.) can evaporated milk
1 (15-oz.) can sweetened condensed milk
1/2 cup sugar
1 tablespoon vanilla (yes tablespoon not a teaspoon)
Whole milk
In a medium bowl beat the whipping cream until stiff peaks form. In a large bowl combine the strawberries, evaporated milk, condensed milk, sugar and vanilla. Fold the whipped cream into the strawberry mixture.
Pour the mixture into an ice cream maker and fill to the line with whole milk. Freeze according to the ice cream freezer manufacturer’s directions.
